In Rajasthan, where dal bati churma and lal maas take the culinary centre stage, a quiet revolution is unfolding. Across Jaipur, chefs and restaurateurs are reimagining the familiar, creating a foodscape that is rooted in tradition and refreshingly experimental. Tucked away in the C-Sceme neighbourhood, Mirove Artisanal Kitchen, which opened its doors earlier this year, was born out of the desire to celebrate Jaipur that feels both, familiar and surprising. “We wanted the menu to be simple yet appealing,” says Sonali Sharma, founder of Mirove.
