Indian Tutti Frutti from Watermelon Rind - best out-of-waste recipe

We all have agreed that when summer time comes, we crave different seasonal fruits like litchis, jamuns, and mangoes but it is incomplete without watermelon: a sweet, watery - red fruit which refreshes us during summer. Generally, we take the inner part of the watermelon and throw the rest of the outer part: the rind (green part). But what if we say that this part is also useful in different things. Yes it is, such as:

  • Pickle it

  • Make it into chutney

  • Use it in an Indian Curry

So here is the recipe for Tutti Frutti with the help of watermelon rind. It is used as a topping for juice and cakes for making them more attractive, it is homemade so it doesn't contain any harmful chemicals or colours, totally healthy.

Ingredients:

  • 3 cups (450 grams) chopped bits of watermelon rinds

  • 2 cups water

 

For the Syrup:

  • 1 cup sugar

  • 1/2 cup water

  • red, orange, yellow & green food colors (or as required)

 

Instructions:

  1. Peel and discard the green part of the watermelon rinds using a peeler or a sharp knife. Scrape off any red portion (fruit) that is still sticking onto the rinds.

  2. Chop the white portion only into small pieces.

  3. Place the chopped pieces into a pot or a pan and cover them with water. Bring the mixture to a boil and cook the pieces for about 8-10 minutes or until the pieces begin to look translucent. Do not overcook them or muffle them till they turn mushy. Drain off the water and preserve aside till required.

  4. To make the sugar syrup, add the sugar and the water into the same pan and let the remedy reach a boil. Then simmer gently until the syrup thickens and you get a one-string consistency. This will take a few minutes.

  5. Add the boiled & drained pieces and give it a good mix. Bring the mixture to a boil and simmer gently for 3-4 minutes.

  6. Now, divide the mixture & the syrup equally into different saucepans depending on how many colors you want to use.

  7. Add the food colors into the saucepans and simmer again until almost all the sugar syrup has been absorbed and the pieces have changed color evenly.

  8. Transfer the tutti frutti into a large colander and let it cool down. Transfer it into clean & clean glass jars and store in the refrigerator. Always use a hygienic, try a spoon to remove the tutti frutti.
