This ice cream recipe is simple to cook, has a variety of flavors, and is completely vegan, with all the ingredients that you might have in your pantry. 

 

For this easy recipe you will only need 5 ingredients: 

 

  1. Cashews
  2. Coconut Milk
  3. Sugar
  4. Sea salt
  5. And the flavor of choice. 

 

Recipe:

  • To make the ice cream the first step is to prepare the base of the ice cream, you need to soak cashews overnight. These will give a firm structure to the ice cream when scoped. 

  • After the cashews are soaked overnight, and dried, blend them in a food processor, with some coconut milk for a creamy texture. coconut milk also adds fat to the recipe, an active ingredient required to set the ice cream.

  • In the blend, you can add any flavor you want to your ice cream. A dash of vanilla bean paste or Vanilla Bean Extract in your ice cream will give it a delicious vanilla flavor. strawberry, vegan cocoa powder, mango pulp, pistachio, etc will give you more flavors, you can indulge in as per the ask of your taste buds. 

  • Sugar is unforgettable, so add 2/3 cup of it to the food processor to blend the ingredients. you can add any sugar you like. you can reduce or increase the amount of sugar as per your liking. Top this mix with a pinch of sea salt, to enhance the flavor and faster freezing. 

  • After your cream is ready, it's time for the ice part. pour the mixture into a mold, and put it into the freezer for a long time. Jessica recommends the ideal time between 6 hours, to overnight.

 

The longer you keep it in the freezer, the density will make the content creamier.
