Ingredients required
- 2 large eggs
- 2 teaspoons fresh squeezed lemon juice/vinegar
- 1 cup of natural flavored oil ( olive oil, walnut, or sweet almond oil, grapeseed oil )
- A pinch of grain sea salt of good quality

- Sturdy wire whisk
- Bowl (with high sides)
Steps to be followed
- Separate the egg whites from the yolks and keep them for other purposes.
- Place the egg yolks in the bowl.
- Pour the lemon juice into the bowl and mix it properly with egg yolks.
- Now, slowly pour a few drops (at a time) of oil into the bowl while mixing them constantly.
- Once the mayonnaise starts to look thick, pour the oil in a slow and steady stream.
- Now, if the mayonnaise begins to look too thick, you can add water to thin it to the consistency you like.
- Once all oil gets mixed, the mayonnaise looks thick and fluffy, with your whisk forming ribbons through the mixture.
- Season it carefully with a grain of sea salt.
- Store the mayonnaise in the fridge in a covered container for three days.
